GLUTEN FREE CORN CAKE RECIPE

I can’t even count how many times I’ve been asked for my Corn Cake Recipe, everyone who tries it completly falls in love with the soft texture and the rich flavor of this cake. So I’ve finally decided to share it with you. This recipe is simple, cozy, easy to make and honestly one of those cakes that you cannot stop eating. sligthly sweet, but super soft, and perfect with coffee or tea.

This corn cake recipe is soft, simple and naturally gluten free because it’s made with fine corn flour instead of regular wheat flour. I always use Pan Corn Flour, this is the classic Venezuelan corn flour used for arepas, empanadas, hallacas, and more, but also works beautifully for cakes, because of it’s fine texture. This flour is a good source of vitamin B, magnesium, fibers and plant based nutrients. Low in fat and no cholesterol, perfect for a lighter baking option.

CORN CAKE RECIPE

INGREDIENTS

  • 1 1/2 Large can of corn
  • 1 1/4 Can condense milk
  • 1 Table spoon baking powder
  • 3 Eggs
  • 60 g Butter
  • 1 Tablespoon vanilla essence
  • A pinch of salt

PREPARATION

  1. Preheat your oven to 160°C
  2. Prepare your cake mold (any shape will do it) Grease it with a layer of butter, Or place baking paper at the bottom (the baking paper is optional but it really helps preventing sticking)
  3. In a blender add corn, condense milk, vanilla essence and blend everything until smooth and creamy
  4. In a separate bowl, mix all dry ingredients: corn flour, baking powder and salt
  5. Gradually add the blender mixture into the bowl
  6. Add the eggs (one by one) and the melted butter gradually
  7. Mix everything slowly with a wooden or silicone spoon using gentle folding movements – Dont rush this part, just mix until everything is well combined
  8. Pour the mixture into your prepared cake mold
  9. Bake for 1 hour at 160°C, or until the cake is golden brown

How to know when it’s ready: Insert a small thin knife into the center of the cake:

  • If the knife comes out clean, the cake is ready
  • If it comes out weat, it needs a little more time in the ove
